Flour-less Peanut Butter Cookies


It'd been a long day, and so when one of my besties called on the fly to ask me over I gladly obliged. Waiting for me, hot out of the oven, were these amazing creations and they have wrapped me around their little peanut buttery fingers ever since. They may be flour-less and gluten-free, but most of all they're delicious.

As I learn to treat my body better, I'm learning to really love food. Before, 10 of these cookies would be inhaled without ever even tasting them. I was after the sugar buzz and oral fixation of making something else my focus. Now though? I savor them, every bite. Tonight these are my gift to you, dear cyberspacers. Thank me later. Flour-less Peanut Butter Cookies
  • 1 cup natural peanut butter (the kind with the oil on top that separates)
  • 1 cup natural cane sugar
  • 1 medium egg
  • 1 teaspoon baking soda
  • 1 cup dark chocolate chips (I use the 'enjoy life' brand)

Pre-heat your oven to 325 degrees. Mix together the peanut butter, sugar, egg, and soda until well blended. Fold in dark chocolate chips. Scoop out in one inch balls on either parchment paper or a silicon baking mat. Bake for 10-15 minutes or until golden brown on top. Let cool before serving (they will fall apart when hot.) 

My favorite part about these babies? They are even better the next day!
